Mustard crusted Chicken Schnitzel w/ apple and celery salad

Ingredients

  • 2 chicken breasts
  • 1 jar Baxters Hot English mustard
  • 100 g Panko Breadcrumbs
  • 30 g Parmesan
  • 30 g Parsley
  • Zest of 1 lemon
  • Splash of oil
  • 100 g water cress
  • 1 granny smith apple
  • 2 sticks celery
  • 20 g walnuts
  • 25 ml white wine vinegar
  • 75 ml olive oil

Preperation

  • Mix the breadcrumbs, parsley, lemon zest and parmesan in a bowl
  • Cut each chicken breast in two across the breast
  • Place each piece between layers of cling film and bat out slightly with a rolling pin
  • Place the chicken in a bowl and add 2 tbsp of Baxter’s hot English mustard
  • Massage the mustard all over the chicken then place each one into the crumb mix and coat fully
  • Bake the chicken at 180oC for 15 minutes until crisp and golden
  • Mean while cut the celery and apple into batons
  • In a bowl mix the water cress, apple, celery and walnut
  • Whisk the olive oil, ww vinegar and a tsp of hot English mustard and season
  • Dress the salad and serve with the schnitzel
