Rainbow Veg Salad

With the weather getting warmer we’re loving trying bright and crunchy salads to go with our new dressings!

Ingredients

  • 100 g red cabbage
  • 1 yellow pepper
  • 1 red chilli
  • 1 head of broccoli or bunch of tenderstem broccoli
  • 1 carrot
  • 6 spring onions
  • 40 g coriander
  • 1 bottle Baxters Pourable Beetroot & Lime Relish
  • 100 g rocket (spinach or any mixed leaves would also work)
  • 50 g pomegranate seeds
  • 50 g dried cranberries
  • *you can add any fresh veg you have in the fridge that needs to be used up.

Preperation

  • Shred the red cabbage finely and cut the pepper and chilli into fine julienne.
  • Peel and julienne the carrot.
  • Cut the broccoli into florets and blanch for 1 minute.
  • Shred the spring onion and chop up the coriander.
  • Mix all of the ingredients in a large bowl with 4 tablespoons of the dressing, ensuring the salad is all evenly coated.
  • Serve straight away sprinkled with more coriander and drizzled with more dressing to taste.

Notes

TIP:
Fruit adds a freshness to this salad but if you can’t get pomegranate seeds then thinly sliced mango, apple and pear all work well in salads too.
