400g Mussels (Bearded and cleaned, your fishmonger will do this if you ask)

125ml white wine

1 chilli Diced

1 jar Baxters Classic Tomato Chutney

1 lime Juiced

20g Fresh Coriander (chopped roughly)


Firstly check through the mussels and discard any that are still open after giving them a good mix. Place a large heavy bottomed pan on the heat and allow to heat up. Add the wine to the pan be careful as this will boil and steam on impact. Add the mussels and cover with a tight fitting lid and allow to steam for 2-3 minutes.

The Mussels are ready when they begin to open. Add the jar of Baxters Classic Tomato Chutney and allow to re boil. Add the coriander and Lime juice and serve immediately using a slotted spoon to remove the mussels then pour over the sauce.
