Roasted Vegetable and Lentil Salad

  • 2 tbsp Baxters Caramelised Onion Relish
  • 1 tbsp olive oil
  • 2 cups cooked lentils
  • 1 cup roasted vegetables of your choice, like carrots, parsnips and onions
  • Seeds from 1/2 a pomegranate
  • Handful of fresh mint leaves
  • salt & pepper (to taste)

Baxters Ingredients


  • In a small bowl, whisk olive oil and relish.
  • In a large bowl, toss lentils, vegetables pomegranate, and mint leaves with dressing.
  • Season with salt and pepper and serve.
