Roasted Vegetable and Lentil Salad
- 2 tbsp Baxters Caramelised Onion Relish
- 1 tbsp olive oil
- 2 cups cooked lentils
- 1 cup roasted vegetables of your choice, like carrots, parsnips and onions
- Seeds from 1/2 a pomegranate
- Handful of fresh mint leaves
- salt & pepper ((to taste))

In a small bowl, whisk olive oil and relish.

In a large bowl, toss lentils, vegetables pomegranate, and mint leaves with dressing.

Season with salt and pepper and serve.
